Around Boskoop the Elder-flower will be blossoming abundantly in Spring time. A invitation for brewing a beer with these lovely fragant flowers: a Blonde-beer with an infusion from Brandewijn in which the fresh Elder-flowers have been soaked for 3 months. A Blond with a Elder(-flower) character!

About 10% hop has been added for every year storage.
Additions: 150ml Mispelblom Brandwijn (35%) with freshly picked Elder-flowers have been soaked for more than 24 months (2 days before bottling)
The brandwijn is filtered through a cheese-cloth and added through a funnel through the water-lock hole of the CCT.
Yeast: 17gr Fermentis T-58 Safbrew Specialty Ale at 20oC
SG (begin - end): 1.070 - 1.022

Mashing-scheme: 24 liter Boskoops water with 0.5gr CaCl2, 2.0gr CaSO4 en 7.0ml lactic acid
Beta-Amylase: 40 minutes at 65oC
In 5 minutes heating up to 72oC
Alpha-Amylase: 40 minutes at 72oC
stir at 15 and 30 minutes
In 10 minutes heating up to 78oC
10 minutes enzyme-deactivation at 78oC
Loutering:
Loutered with 10 liter Boskoops water with 1.3ml lactic acid at 80oC
Fermentation: 19...30 days in CCT, no yeast drained
