Boskoops Bodengraven Bier

Roel Mulder wrote the book "De Verloren Bieren van Nederland" (The Lost Beers of The Netherlands), and one of the old recipes from around 1850 was the "Bodegraven Brown Stout", with one of it its ingredients an old herb 'scharlei'. This beer is the modern version, with 'scharlei' from a grower from Boskoop and grown in my own garden, and taking into account the modern barleys and hops. The herb base has been kept the same, which has resulted in a heavy and herbal Ale.

I had some more 'scharlei' in the freezer, so this recipe has been repeated again in 2019, and... thre are already a few new scharlei-plants in the garden!

Recommended drinking temperature: 8...12 oC

1.5gr aniseed (@ 15min)
1.5gr clove (@ 15min)
4.0gr cinnamon stick (@ vlamuit)
10.0gr freshly-cut ginger root (@ vlamuit)
Yeast: 22gr Danstar Nothingham, plus 2gr yeast nutrition (batch 020)
20gr Mangrove Jack M42 New World Srong Ale, plus 2.2gr yeast nutrition (batch 026)
SG (start - end): 1.085 - 1.025 (batch 020)
1.082 - 1.016 (batch 026)
Steeping-scheme: Out-flakes pre-cooked with 3l water and cooled
Single-step Steeping: 75 minutes with 21 liter Boskoops water (2.5ml lactic acid and 3.6gr NaSO4) of 70oC at 67oC
In 15 minuten heated to 78oC
10 minutes rest at 78oC
4x gefiltered through spiral filter (due to the oat-meal it will take a while!) (batch 020)
rinsed with 10.5 liter Boskoops water (non-treated) at 80oC
Fermentation: First fermentation of 8-16 days
Second fermentation of 6-13 days
