Saison de Boskoop

Saison is a type of beer which finds its origin in the south Belgium province of Henegouwen.

Saison is French for "season", because originally this was a seasonable beer, brewed by farmers in the wintertime to be drunk by the seasonable workers during harvesting. One had to brew in the cold of the Wintertime t prevent the beer to spoil during lagering. These beers had a relative low alcohol percentage of around 3% and had extra hopping to preserve the beer.
The modern saison-beers are brewed throughout the year and not only anymore in Wallonia. Most beers are golden blond to amber unfiltered beers with top-fermentation and show alcohol percentages between 5% and 6.5%.
Some famous examples are: Saison Dupont, Saison 1900, Saison d'Epeautre, and Saison de Pipaix.

The latter one has been the inspiration for the Saison de Boskoop, with the same herbs, however slighly different barlyes, in order to get a fuller taste without losing the thrist-clencing dryness of a typical saison. The first batch (004) has been brewed for the occassion of a special family weekend in the south of France in May 2015.

The taste of ginger-root, oranges and star-anise are giving this beer a nice freshening balance against the hoppiness and the full body. A saison which sparkles on the tongue, but leaves a full taste in the mouth.

Yeast: 022, 032 en 039: 17gr Mangrove Jack's French Saison M29
008 en 013: 17 gr DCL/Fermentis T-58 SafBrew Specialty Ale
SG (start - end): 1.065 - 1.002
Steeping-scheme: Infusie with 25 liter Boskoops water (1.5gr CaCl2, 0.5gr CaSO4 (gips) and 6.0ml melkzuur) at 66oC
Steeping-scheme:
- Beta-amylase: 64oC 60 min
- Heating to 72oC: 30 minutes
- Alpha-amylase: 72oC 15min
- Heating to 78oC in 5min
- Steep-out: 78oC 10min
Filtered with pump through the grain, stirring each 15 min. until Alph-amylase.
Loutered with 3.9 liter Boskoops water at 81oC with 1.5ml lactic acid
Fermentation: Fermentation of 18 days at 26-29oC

Bottled: In 33cl bottles with 1 Cooper sugar drop (eff. 2.52gr suiker) per bottle (7.6gr/l)
